Grilled Smoked Mackerel Salad with Thai Dressing

Preparation Time:  15 Minutes                              Cooking Time: 2 Minutes                                      Serves:  2

Ingredients

  • 2 Smoked Mackerel Fillets
  • Baby Leaf Spinach
  • 1 Carrot (shredded)
  • 1/2 Red Pepper
  • 1/2 Red Onion
  • 4 Chestnut Mushrooms
  • 2 Pickled Beetroot
  • 6 Asparagus

Thai Dressing:

  • EV Olive Oil
  • 1 Tomato
  • 1 Garlic Clove
  • 1/2″ cube Ginger
  • 1 Red Chilli
  • Few Sprigs Basil
  • Few Sprigs Coriander
  • 1 tsp Honey
  • Splash Rice Vinegar
  • Sea Salt

Method

Pre-heat the grill.

Place a handful of washed spinach in each bowl. Finely slice the onion, carrot, pepper & mushrooms, mix and place on top of the spinach. Wedge the beetroot and arrange around the outside.

Grill the mackerel for a minute each side. Blanch the asparagus in boiling water for 1 1/2 mins.

Place all the dressing ingredients in a blender and blitz until smooth, drizzle over the salad.

Bonus Bits

– As with all cold water fish mackerel is an oily fish. and is therefore rich in omega 3 fatty acids, essential for the body & brain. Our bodies can’t make this type of fatty acid, so we need to include it in our diet.

– Always remove the base of the stem of mushrooms before use, as these are where any impurities will be.
