Porridge with Honey, Raisins & Walnuts

It’s about time we got some breakfast recipes going. Porridge is a great start to the day, and the beauty of it is that there’s so many different tweaks you can do to make each one taste completely different. Some more ideas to follow….

Preparation Time:  2 Minutes                              Cooking Time: 5 Minutes                                   Serves:  2-3

  • 1 pint Semi Skimmed Milk
  • 150g Jumbo Porridge Oats
  • Drizzle of Honey
  • Handful of Walnuts (soaked)
  • Sprinkle of Sultanas
  • A pinch of Sea Salt

1. Bring the milk, oats & salt to a gentle simmer for 5mins, until the oats have softened and the porridge thickened nicely.

2. Bowl up and drizzle the honey, sprinkle the sultanas.

3. Wrap the walnuts in cling film and bash them up a bit, then sprinkle.

Bonus Bits

– For best results soak the walnuts overnight to take the bitterness away. This also starts the germination process.

– Porridge is a great breakfast for a couple of mornings a week. Oats have a low glycemic index (GI) and resulting low blood sugar levels, so good slow release energy throughout the morning keeping energy peaks and troughs to a minimum, and hunger at bay.

– Always try and use local honey, especially if you’re a hayfeaver sufferer, as this can help to reduce your intolerance to local flora.
