Warm Chargrilled Chicken & Med Veg Salad

A hearty salad, full of goodness and great flavours. The only pre-requisite is the chargrill pan as this will fry the ingredients without them sweating in their juices own juices.

Preparation Time:  15 Minutes                              Cooking Time: 35 Minutes                                    Serves:  3

Ingredients

For Chargrilling:

  • 3 Skinless Chicken Breasts
  • 2 Carrots
  • 1 Courgette
  • 1 Red Pepper
  • 1 Red Onion
  • 3tsp of Coconut Oil (melted)
  • Sea Salt

For the Salad:

  • 1 Handful of Baby Leaf Spinach
  • 1 Handful of Red Chard (Stems Removed)
  • 3 small Tomatoes
  • 24 Black Olives
  • 3 Eggs

Method

1. Preheat the oven to 100°

2. Preheat a chargrill pan, slice and chargrill all the veg in turn, then the chicken (see bonus bits), tossing them in coconut oil and salt before placing in the pan. Char the veg, but keep it crunchy. Transfer each to a roasting dish when cooked (keep the chicken separate) and keep warm in the oven until the rest is prepared.

3. While the chicken is cooking, pop the eggs into boiling water, and boil for 5 minutes for a soft yolk, and 7 minutes for hard. To peel, allow to chill in cold water for 1 minute then fracture the egg all over.

4. Wash the spinach and chard, prepare the tomatoes, and serve with a dressing.

Bonus Bits

– Slice it’s all veg and chicken at a steep angle, this will increase the surface area for grilling. Then it’s is all about timing, while one vegetable is chargrilling you’re preparing the other.

– If you keep your eggs in the fridge, run under warm water for a minute before putting them in boiling water, this will prevent them cracking due to the drastic change in temperature.

– I served this with a wholegrain mustard & garlic dressing, initially drizzled over the salad and the remaining to mix with the veg before serving.
