Salmon Broccoli & Ginger Fish Cakes on Green Lentils

Here’s two recipes for the price of one! They compliment each other fantastically, but also work individually as either starters or compliments to other dishes.

Preparation Time:  40 Minutes                             Cooking Time: 40 Minutes                               Serves:  3-4

Ingredients

The Fishcakes:

  • 2 Salmon Fillets
  • 3 Medium Potatoes, diced
  • 100g Broccoli Florets
  • 1/2 Red Onion
  • 1.5″ Cube Ginger, grated
  • 2 Garlic Cloves, crushed
  • 2 tsp Dijon Mustard
  • 1/2 Lemon Squeezed
  • 100g Plain Flour or Coconut Flour
  • Sea Salt and Black Pepper

The Lentils:

  • 5 Rashers of Smoked Bacon
  • 150g Green Lentils
  • 1 Stick of Celery
  • 1 Carrot
  • 1 medium white onion
  • 1/4 of a Fennel
  • 1 large Garlic Clove
  • 1 Bayleaf
  • A few sprigs of Fresh Thyme
  • 300ml Veg Stock
  • Sea Salt & Black Pepper

Method

1. Put rashers into a hot pan (no oil) and fry until crispy. Remove from the pan and toss in the finely chopped onion, celery, carrot, fennel and garlic to fry gently in the bacon fat. Once softened a little add the lentils and the rest of the ingredients that go with them, place a lid on top and gently simmer for 30mins. Slice the bacon and add at the end, being sure to remove the bay leaf.

Meanwhile……

2. Season and grill the salmon fillets, for 10 minutes per inch of thickness.

3. Boil the potatoes in seasoned water, then mash. Fry the onions, ginger and garlic gently in the coconut oil until just softened, add to the mash. Boil the broccoli in seasoned water for 2 mins, remove and cut very small, add to the mash. Stir in the mustard, lemon juice and seasoning, and flake in the salmon. Mix well.

4. Mould the mixture into 6 – 8 large balls, roll in the flour, flatten a little and fry on a medium heat in the coconut oil for a few minutes until browned on both sides. Finish in the oven at 200° for 10 minutes to ensure piping hot all the way through.

Bonus Bits

– Serve this with a side of vegetables, i found cabbage a complimentary option.

– Lentils are a great source of protein, and they also offer a number of other beneficial nutrients such as fiber and iron. 

– After preparing raw fish, wash your hands in cold soapy water, hot water tends to cook the fish residue and then sticks to your skin and holding the smell.
