Honey Roasted Beetroot with Caraway

In my opinion one of the best things you can do to a beetroot, we do it a lot, so I thought I’d tweak it a little, and this worked nicely…

Preparation Time:  10 Minutes                            Cooking Time:  40 Minutes                                Serves:  2-3

Ingredients

  • 6 medium Beets, peeled
  • Coconut Oil
  • Caraway Seeds
  • 2tsp Manuka Honey
  • Fresh Thyme, a few sprigs, picked and chopped
  • Sea Salt & Cracked Black Pepper

Method

1. Preheat the oven to 190°, heating the oil in the roasting tin

2. Throw all into the tin all except for the honey & thyme. Coat well in the oil, and place in the oven for 30 minutes

3. Remove from the oven, drizzle over the honey, and mix in the thyme. Place back in the oven for a further 10 minutes.

Bonus Bits

– Beetroot is one of nature’s richest super foods. Beetroot is high in iron (which the body often struggles to absorb efficiently) and vitamin C (which aids the absorption of the iron!). – Caraway seeds offer a nice flavour to stews, especially beef. I also like to use it with sautéed cabbage.
