Roasted Cod Loin with Prawn, Chorizo and Butter Beans

I can’t resist using chorizo with in a fish dish sometimes, it just seems to compliment it perfectly! This is a very simple and quick dish, ideal for a light lunch or dinner. Serve also with a side of steamed broccoli.

Preparation Time:  10 Minutes                              Cooking Time: 15 Minutes                                    Serves: 2

Ingredients

  • 2 Cod Fillets
  • 150g Raw King Prawns
  • Sea Salt & Black Pepper
  • 1/2 Lemon, squeezed
  • 1tbsp Coconut Oil
  • 1 Small Onion, diced
  • 1 Celery Stick, chopped
  • 1/4 Fennel, chopped
  • 80g Chorizo, small dices
  • 200g Butter Beans
  • 1tbsp Tomato Puree
  • 1 Veg Stock Cube
  • 100ml Boiling Water

Method

1. Preheat the oven to 190° (GM5)

2. Place the cod on a greased baking tray, season, squeeze with lemon, drizzle with oil, and place in the oven for approx 15 minutes

3. Heat the oil in a saucepan, toss in the chopped onion, celery and fennel, and fry for a minute. Then add the chorizo and fry for a further 2 minutes.

4. Add the rest of the ingredients and cook for a few more minutes, the sauce should thicken a little.

5. 1 minute before serving throw in the prawns, these  will cook super quick

Bonus Bits

– When preparing fish, it’s often very difficult to get the fishy smell off your hands. Try washing your hands with cold soapy water, hot water just cooks the fish juices to your skin.

– Cod is packed full of nutrients: High in protein, Omega 3’s, Vitamin B, and Niacin.

– Some chopped parsley would’ve finished this dish off perfectly, I just didn’t have any!
